Santa Fe Chicken


Soooooo without going into detail, Steven will be at dispatch for the next few years as opposed to out on the engine so that means his schedule goes from 24 hours on and 96 hours off, to a basic 9-5 job. Soooo I’m back at it with the meal prepping and when I prep meals SPECIFICALLY for Steven you know because it’s spicy and or hot. So taco mix anything, chili powder anything- steven is all about. haha. And this chicken was a perfect recipe for him!!

Home Made MeatLoaf


I feel like the word meatloaf just immediately turns people off. They really should come up with a better name!
But to be honest, I was like that as a kid. I just knew other people didn’t like it so why would I?? The first time I tried meatloaf was in highschool (or maybe ending middle school) I was at my friends house and her mom made meatloaf. Well…. let me tell you it was the hardest thing in the entire world for me to force down. I’m not exaggerating. I HATED it.
So the fact I tried it again is bizarre… but here I am now totally in love. I do keep it very plain but I will show you what you can add into it to make it more zesty and flavorful!

  • Ingredients If made from Scratch:
    2 tsp dried mustard
    2 tsp paprika
    1.5 tsp Salt
    1.5 tsp Basil
    3/4-1 tsp Thyme
    1tsp Pepper
    1tsp garlic powder
    1tsp onion powder
    2# ground beef/turkey
    2 eggs
    1/2 cup milk

  • If using the McCormick’s meatloaf mix- add milk, eggs.

  • possible additives
    panko bread crumbs
    dijon mustard
    ketchup
    rice
    onion

Mix all ingredients together into a large bowl. Mix together with your hands. Then place into an oven safe dish (it was valentines day so I made small heart patties for meal prep!
If you choose to do small patties- bake for 1 hour
If you Choose to do one large loaf - bake for 1 hour 15 minutes

Panko Crusted Rockfish


Just another fish recipe…
I know when I am trying to get a recipe off pinterest i’m so annoyed at all the jibber jabber and having to scroll wayyyyyyyy down just to get to everything. SO! I’ll keep it simple. :)

This is how I set up my station for this meal. On the left I have my flour,salt and pepper mixture, then in the center is the egg and milk mixture, and to the right is the panko crust mix.

Dunk your fish into the flour and completely coat.

Dip your fish into the egg mixture and let drip off for about 30 seconds to a minute. After that time has passed, cover your fish with the panko mix. Place your fish into an oven safe dish that had been oiled on the bottom.

Place your fish in the oven at 450 degrees for 4-5 minutes.
After 5 minutes, flip the fish and bake for another 4-5 minutes.
Once finished take out and let sit for 5 before serving!

I was meal prepping for Steven when making this recipe, so I made some lebanese rice and steamed veggies. I think fish and rice or asparagus are soooooo so tasty :P

Dijon Garlic Chicken

I love this recipe because its super easy, but sooooo tasty it feels like some of the other recipes I know and love that take a lot more time to make.

Here’s what you’ll need (and yes I keep my olive oil in an old coke bottle)
2 tbsp soy sauce
2 tbsp dijon mustard
2 tbsp maple syrup
1 tbsp olive oil
1 tsp rosemary
1 tbsp garlic powder

Place your chicken in a greased dish. I just sprayed the pan, as opposed to using an oil because there is oil in the mixture of spices! Plus spray is just.. easier lol

In a separate bowl, mix together all of your ingredients aside from the rosemary. If you have fresh rosemary- use that! much tastier! :)

Pour the mixture over your chicken and top with a sprinkle of rosemary! (or fresh rosemary if you have it)

Bake for 25 minutes at 420 degrees.

I placed my chicken over a bed of rice and added some veggies, but you can have anything with this! cut it up and have with salad, pasta salad, potatoes etc. I love chicken for this reason- the sides are endless!

Stuffed Cabbage Rolls


I can’t eat a salad for very long. I can do like…. a small handful of lettuce dunked in ranch but then i’m over it and I just want something else. Give me my steak already! But I loooove love love stuffed cabbage. What I extra love is that it is a lebanese dish (when you make it with lamb especially) but lamb is expensive and not as easy to get, so I make mine with ground beef. I am a BIG plain jane, so I don’t add a ton into mine, but I will share with you some ideas to add more! :) Enjoy

Get yourself I roll of cabbage. Boil a large pot of water and add cabbage and let boil for approximately 3 minutes.

In the meantime and in a large bowl, add 1.5lb burger, 1 egg, garlic powder, salt and pepper, 1/4 cup milk and mix together.
In another bowl, mix together lemon juice, worstershire sauce, and tomato sauce.

Once the cabbage is finished boiling, peel off the pieces. Below you’ll see how I set up my kitchen to make a nice and easy buffet style for making the stuffed cabbage.

I was able to rip each cabbage leaf in half and take a small handful of meat and roll up into the leaf. Then I place it into the baking dish. If you add more into your meat mixture, you will end up with more rolls, are (without ripping the leaves in half) large cabbage rolls.

Once you’re done rolling up your leaves and placing them into the dish, pour the tomato mixture over top the rolls.

Cover your dish with tin foil and Bake your rolls in the oven at 350 for 1 hour and 15 minutes.

Drumsticks


This is something I could literally eat every single day. I feel like the side dishes are endless with these chicken legs, and that changes up the meal enough that I don’t feel like I am eating the exact same thing over and over again.
I have 5 of these puppies prepped almost at all times in my fridge. They reheat really well and make for a quick lunch or dinner.

Creamy Chicken Noodle Soup


I made this soup almost two weeks ago because I was craving noodles, broth but had leftover rotisseri that I needed to do something with. Before tasting the final product I was shocked at the amount this made. Like… it literally barely fit into my largest pot! But it was so stinking delicious that I have now made it again. Plus soup is great to freeze and have for a colder night :)

ROCKFISH DISH

I have never heard of Rockfish before, but this is what Steven brought me when I told him to go pick out a protein for meal prep. I was excited to get to use a new meat!

Next: add 1/2 cup vegetable broth to entire dish.

I added diced red bell pepper and broccoli to finish off the dish! :) 

Chicken

This is currently my most favorite chicken recipes I have made to date! There is a lot of steps, but I'm telling you it's worth every one of them! :) 


Ingredients:

  • 3 chicken breasts
  • 2 tbsp olive oil
  • 6 tbsp butter
  • 1/2 cup heavy whipping cream
  • 1.5 cups chicken stock
  • 1 tbsp flour
  • 1/2 sweet onion
  • 1/2 box mushrooms
  • 2 cloves garlic
  • sweet white wine (barefoot moscato)
  • 3 tbsp parslay
  • salt + pepper
  • shredded mozzarella cheese

add your butter and olive oil to pan along with

Saute your mushrooms and garlic for 5 minutes in pan.

next, add in your finely chopped sweet onion. I put mine through my food processor.

Continue to cook for another 2-3 minutes.

season everything in the pan with parsley, salt and pepper. stir a bit more then remove.

Wipe out your pan with a paper towel and set aside mushroom mix.

Once you have sliced your chicken in half, use a mallet to flatten each piece to be no thicker than 1/4".

 

Add 2 more tbsp to pan and 1tbsp olive oil to pan. Be sure you salt and pepper both sides of your chicken then place in pan.

Once the chicken is cooked, remove and place onto the same plate as your mushrooms. 

In the same pan pour your wine.

Add:

heavy whipping cream

chicken stockflour

Place your chicken and mushrooms back in pan. Add in greens of your choice (I used green beans) . 

 

Sprinkle mozzarella cheese on top of chicken and place into oven to broil for 2-3 minutes or until cheese is melted.
